Today I will share with you a very easy and simple recipe of Gawar Aloo Sabji ( Cluster Bean & Potato Curry ). Ingredient
- Cluster Bean – 300g
- Potato – 2 medium size
- Onion – 1
- Fresh green chilly – 2
- Coriander for garnish
- Mustard seeds, Cumin seeds, Turmeric powder, Red chilly powder, Salt
Wash and clean the cluster beans. Cut them into equal sizes. You may cut 4-5 pieces at a time for faster preparation time. Peel of the potato skin and cut them into slices. The slices should be thin as shown below so they would cook faster. Cut the onion into slices as well. Cut green chilly into small pieces. When done, it would look as below.
Heat the pan with oil about 2-3 tablespoons. Once the oil is hot, add mustard seeds and cumin seeds, let them flutter for a minute. Add green chillies and onion. Saute them for about 2 minutes.Add coriander, this will give nice aroma to the dish. Add Potato and mix them well. Let the potatoes cook for 3-4 minutes.
Once they turn a bit soft, add the cluster beans and mix them well.
Put the gas on low-medium heat and cover the pan with a lid. You may add some water on top of the lid, this will help in faster cooking and the surface of the pan will not be burnt. Alternatively you may add sufficient oil in the pan. Once you see little bubbles on the lid, that means the vegetables are getting soft boiled.
Add turmeric powder. You may add some salt here, so the cluster bean would cook faster. Cook for 2 minutes. Add chill powder and salt. Mix them well. Add some water. Turn the heat to medium-high heat. Cook for 4-5 minutes. You may cover the lid, for faster cooking.
Once the cluster bean have turned dark green/brown and very soft, the dish is almost ready. If you want to eat with Chapathi, you may add less water. If you prefer to eat the dish with rice, add adequate water while cooking, this will turn the dish to gravy.
Add coriander in the end for garnish. Enjoy the delicious food along with Chapathi or Rice, as you prefer.
